In Sidrería Izeta we make two different ciders. On one hand, “IZ”, and on the other our “Sidra Izeta”, which we have produced from the start. Although both are made almost exclusively from apples from our apple trees, the Natural Cider of the Basque Country certificate indicates that our Sidra IZ offers a guarantee of 100% local production.
Our IZ cider is made from 100% locally-grown apples, i.e. apples from our apple trees and from other farmhouses located along the Urola coast. The balance contributed by the different apple trees we have in Izeta provides an extraordinary flavour in this cider.
In the case of Sidra Izeta, 80% of the apples used to make it are from our apple trees. The remaining 20% is from apples imported from outside the Basque Country, both nationally and internationally.
2Once the apples have been selected, they are cleaned before they pass through the lagar (receptacle) and the matxaka (press). The apples are pressed to obtain the juice and fill the cupelas (barrels). The apple juice is left in the barrels for a time, usually until the end of January. By that date the cider is ready, and the TXOTX (cider toast) season start.
After the cider has rested in the barrels for the necessary period it is bottled. The drink is poured into 0.75-litre bottles and rests for a further period in the cellar.
4Once all the above has been completed, the cider is ready for sale. Nowadays, we produce 130,000 litres of cider a year in Sidrería Izeta, many of which are bottled and sold. Many others are kept in the barrels in the cider house so that customers in our restaurant can enjoy the drink.

A juice made from a variety of cider apples from our apple trees. It is exclusively produced in Izeta; from the juice obtained in the store, followed by pasteurisation and then bottling. This sweet, non-alcoholic drink can be enjoyed at any time of day and is an excellent complement to desserts.
